The 'thing' about AV is that it takes people with quite a bit of skill in both design and in technical know how to get things working - you would basically need to hire on an entire department if you were to 'move into' the AV arena - basically starting up afresh.

Now, provided you are established, and you already do everything else (staging, rigging, lighting, sound, set dressing, whatever) the addition of AV is certainly something to explore. However, if all your company is now, is one that sources everything from other companies, I say maintain the status quo. Then maybe add staging and set dressing, then rigging, sound, lighting and only then think about AV. Staging is usually mainly 'grunt' work, and set dressing is fairly easy to 'learn'. Companies often want things hung, and a couple of people trained in rigging is great. Sound, then lighting - both, whilst skilled fields have NOTHING on the design process for GOOD av work (I am not talking powerpoint slides here or a simple video feed).
